Fudgy Cheesecake Brownies

1: Preheat oven to 175°C / 350°F and grease an 8x8 inch pan with parchment paper.

2: Prepare the cream cheese layer by whisking together cream cheese, egg, vanilla, and sugar until smooth.

3: For the brownie layer, brown the butter in a saucepan over medium-low heat, stirring until the milk solids turn golden.

4: Transfer browned butter to a heatproof bowl and add cocoa powder, oil, vanilla, and chopped chocolate; mix until dissolved and let cool for 15-20 mins.

5: In another bowl, whisk eggs and light brown sugar for 4-6 minutes until dissolved and pale.

6: Add powdered sugar to the egg mixture and mix until combined.

7: Combine this with the cooled butter mixture and mix until combined.

8: Add flour and chocolate chips and mix until just combined.

9: Transfer half of the brownie mixture to the prepared pan.

10: Reserve 30g / 2-3 tbsp of cream cheese mixture; add the remaining to the brownie mixture.

11: Top with the remaining brownie batter and add the reserved cream cheese mixture, making swirls.

12: Bake for 40-45 minutes or until the edges are golden and center is a little fudgy.

13: Let cool completely before cutting.
