Crispy Chicken and Potato Doughnuts
30 mins prepServes 25
These Crispy Chicken and Potato Doughnuts are packed with flavor from boiled chicken, potatoes, and a mix of fresh vegetables and cheeses. They're coated in breadcrumbs and fried until golden brown or can be made in an air fryer for a healthier option. Perfect as a snack or appetizer, you can also freeze them for future enjoyment. Serve them hot to impress your family and friends!
1: In a large bowl, combine potatoes, chicken, carrots, Serrano peppers, bell peppers, green onions, egg, cornstarch, salt, pepper, garlic powder, chicken powder, and cheese.
2: Mix until well combined and sticky.
3: In a separate bowl, mix flour and water to form a thick paste.
4: In another bowl, add bread crumbs.
5: Shape the potato-chicken mixture into doughnuts and place them on a tray.
6: Freeze them for 30 minutes.
7: Coat the chicken doughnuts in the flour mixture, then in bread crumbs.
8: You can freeze the chicken doughnuts for later use at this point, or heat oil in a pan over medium heat.
9: Drop in the dough and fry for 2-3 minutes, flipping sides, or until golden brown and crispy. Do not overcrowd the pan.
10: If air frying, lightly spray the chicken doughnuts with cooking oil and air fry at 400°F (200°C) for 10 minutes, flipping halfway.
