A rich and creamy tomato pasta made with garlic, heavy cream, and a blend of cheeses for extra flavor. This dish combines the goodness of pasta with a delicious sauce, garnished with parsley for a touch of freshness.
Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
In a pan, heat oil over medium heat. Add 1 tbsp butter. Add minced garlic and sauté until fragrant.
Add diced onion and cook until translucent.
Add tomato paste and cook for 1-2 minutes, stirring constantly. Deglaze the pan with a splash of water, scraping up any browned bits. Season with salt, black pepper, garlic powder, Italian seasoning, smoked paprika, and red chili flakes.
Pour in heavy cream and stir to combine. Bring mixture to a simmer. Add remaining butter.
Reduce heat to low and add cheddar and parmesan cheese. Stir until melted and smooth.
Add cooked pasta to the sauce and toss to combine. If sauce is too thick, add reserved pasta water.
Garnish with chopped parsley and serve hot.
