Delicious chocolate date balls made with pitted medjool dates, mixed nuts, unsweetened coconut flakes, oats, and honey. These treats are easy to make and can be topped with melted chocolate or coconut flakes for added flavor.
Soak the dates in hot water for a few minutes to soften. Drain and squeeze out excess water.
Pulse the nuts, coconut, and oats in a food processor until finely ground.
Add the dates, vanilla extract, and honey to the processor. Pulse until a thick, sticky dough ball forms.
Remove the dough ball from the food processor.
Roll the dough into small balls.
Melt some chocolate and dip the balls in the melted chocolate, coat them with coconut flakes, or leave them without toppings.
Place on a baking sheet and store in the freezer until they are hard enough not to stick together.
Transfer to an airtight container and keep in the refrigerator or freezer.
