Cheeseburger bombs made with minced chicken or beef, onions, and a blend of spices, wrapped in dough and baked until golden. They're perfect for a tasty snack or meal.
In a medium bowl, stir flour, salt, and yeast, then mix with a wooden spoon until just combined. Gradually add water and knead the dough in the bowl until smooth, about 2 minutes. If too sticky, sprinkle with more flour, 1 tbsp at a time, until no longer sticky. Let rest for 5 minutes.
Preheat oven to 425°F. Heat a medium nonstick skillet over medium-high heat and spray with nonstick spray.
Add minced chicken, onion, and salt to the skillet and cook, stirring to crumble meat, until the chicken is cooked through and the onion is tender, about 5 minutes. Let cool slightly, then mix in mayonnaise and set aside.
On a large piece of parchment paper, sprinkle with flour and place the dough. Cut it into 8 equal pieces, roll each piece into a ball, and flatten into a 5-inch round.
Arrange 1 tbsp of cheese in the middle of each round, top with about 2 tbsp of the chicken mixture, and 1.5 tsp of pickles and onions.
Pull the edges of the dough up and over filling and pinch to seal. If the dough tears, pinch it back together.
Arrange dough balls seam-side down on a parchment-lined baking sheet. Brush with egg and sprinkle with sesame seeds.
Bake until lightly browned, about 15 minutes. Broil for an additional minute for more browning. Serve with mustard for dipping, if desired.
