This is an easy to make Caramel Flan recipe made using cream cheese, whole eggs, condensed, and evaporated milk, covered with a light sugar syrup. It serves 8 and is perfect for dessert.
In a medium-size saucepan place the sugar and water, bring to a boil on high heat until sugar dissolves.
When sugar dissolves, reduce heat and keep boiling until the syrup gets a light brown-caramel color, about 10 minutes.
Pour the caramel into your oven-proof pan, swirling to cover the bottom evenly. Let cool.
Meanwhile, whisk together cream cheese, condensed milk, eggs, vanilla extract, and evaporated milk until incorporated.
Pour the mixture over the caramel.
Pour hot water into the baking pan around the custard dishes to a depth of about 1 inch.
Bake the flan at 350°F for 50 minutes to an hour in the water bath.
Check with a knife inserted just off-center into one of the servings; if the knife comes out clean, the flan is ready.
To serve, invert the dish onto a small plate, allowing the flan to drop out and the caramel sauce to flow over the custard.
