Delicious cookies made with brown butter, toffee, and chocolate chips. This recipe yields 9-10 cookies and combines rich flavors for a delightful treat.
In a medium saucepan, add toffee ingredients: butter, sugar, and salt over medium heat.
Once boiling, swirl or stir every 10 seconds until butter turns deep amber (about 6-8 minutes).
Remove from heat and pour carefully onto a parchment-lined surface and let cool for about 15-20 minutes. Break into pieces.
 Preheat oven to 350°F.
In a pan, add butter over medium heat and melt it, then continue cooking until it turns deep amber and develops a nutty aroma (about 5-7 minutes). Remove from heat and let cool.
In a bowl, whisk together flour, baking soda, and salt. Set aside.
In a separate bowl, combine the cooled brown butter, brown sugar, and granulated sugar. Whisk for 1-2 minutes until a paste forms.
Crack in the egg and vanilla, mixing until well combined (2-3 minutes).
Fold dry ingredients into wet batter until just combined.
Stir in chocolate chips and prepared toffee pieces.
Prepare a baking sheet with parchment paper and scoop 4 cookies onto it, leaving space in between them.
Optionally, top with additional chocolate chips if desired.
Bake for 12 minutes or until golden and crispy at the edges and gooey at the center.
 Allow cookies to cool completely.
(Optional) As soon as cookies come out of the oven, place a round cookie cutter around each and gently spin to smooth uneven edges.
