Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch (20x20cm) pan with parchment paper.
Prepare the cheesecake layer: Whisk the cream cheese, egg, vanilla, cornstarch, sour cream, and sugar until smooth. Mix in caramel sauce until just combined.
Prepare the cookie dough layer: In a bowl, mix the flour, baking soda, and salt. Set aside. In a separate bowl, combine the melted butter, brown sugar, granulated sugar, egg, and vanilla. Whisk for 1-2 minutes until the paste forms. Combine the dry ingredients into the wet batter and gently fold until just combined. Add chocolate chips and mix with a spatula. Do not overmix.
Transfer 3/4 of the cookie dough to the prepared pan. Reserve the rest for topping. Add a layer of chocolate wafers.
Top with the cheesecake mixture, drizzle with caramel sauce, and make swirls. Add the remaining cookie dough mixture on top. Add some chocolate wafers.
Bake for 35-40 minutes or until the edges are golden and the center is slightly fudgy.
Let cool completely before cutting and serving.
